3. In a large pan with a drizzle of olive oil, sauté the chopped onion and garlic for a few minutes.

4. Add the eggplants and bell peppers, and cook for 5 to 10 minutes until they start to soften.

5. Then add the zucchinis, tomatoes, and the bouquet garni.

6. Cover and let simmer on low heat for about 40 minutes, stirring occasionally.
